Gangliosides are involved in neuronal development, neuropathologic processes, receptor interactions with protein hormones, interferon, fibronectin and toxins from bacteria, They are also essential for the development of intestinal immunity by producing intestinal IgA and cytokine.
General description
Gangliosides are glycosphingolipids containing a hydrophobic ceramide and hydrophilic oligosaccharide chain. They are found in various tissues and fluids in vertebrates, especially in human brain and bovine milk. The most common gangliosides in milk are 2NeuAc−2Hex−Cer (GD3) and NeuAc−2Hex−Cer (GM3).
